The Mountain Water Process remove 99.9% of the caffeine through the process of using clear pure water from the highest mountain in Mexico, the Pico de Orizaba. By immersing the green beans in water in order to extract the caffeine content.
The water is passed through a filtration system to remove the caffeine from the water containing these soluble flavour elements, preserving the soluble flavour components of the green beans, and protecting the original characteristics of the coffee.
You will find that this coffee might need a finer grind size in order to achieve that balance cup compared to the caffeinated coffee beans due to the absence of caffeine compound.
This is a Marsellesa cultivar, a cross between Timor Hybrid 832/2 and Villa Sarchi CIFC 971/10. Pedigree selection made by ECOM-CIRAD in Nicaragua specifically for its rust resistance traits.
That being said, this is still a flavourful cup of coffee. You can expect flavour notes of citrus ripe grapefruit on the first sip. As you take the second sip, you will taste notes of red apple, and a pleasant finish of almond at the end.
