Espresso Brewing
In the quest to create consistent coffee every time, we formulated our own water recipe to accommodate our roast profile, with a water hardness of 78 ppm, a Magnesium content of 150 ppm, and a buffer of Sodium Bicarbonate at 44.8 ppm.
Our Equipment
Victoria Arduino's Prima Machine, set at a 93.5 degrees temperature, and MYTHOS MY85.
Our Parameters
For our portafilter basket, we are using VST's Precision 18grams
Dose in: 18 grams
Target yield: 42-44 grams
Target time: 29-31 seconds
Pre-infusion: 3 seconds, Hold: 3 seconds
This recipe should give you a good starting point when dialling in our coffee.
You can expect a flavour clarity-focused espresso, with a medium-light mouthfeel coupled with high sweetness and low bitterness.
Feel free to adjust the target yield to your preferred body of your espresso.
Pour Over

Our Parameters
We start by setting the water temperature at 93 °C, starting with 15 grams of our coffee, with a target yield of 240 grams total weight. The total brew time should be no longer than 2:30.
Our Pour Pattern
Start with an initial pour of 60g at a closed valve, and stir the grounds until they are evenly wet.
Second pour starts from 0:35, 100g at open valve, starting from the centre of the brew, in a circular motion, complete 3 circles to the outer circle of the brew and circulate back to the middle with 3 circles, ending in the centre
The final pour starts at 1:10, 80g at open valve, with the same pouring pattern as the second pour.
The brew should finish at 2:30 or less.
This recipe should give you a good starting point when dialling in our coffee.
